Ethiopia is widely considered the birthplace of coffee (Coffea arabica grows wild in its highland forests) and remains one of the most diverse coffee-growing origins in the world. Unlike most producing countries, Ethiopian coffee is often grown from countless indigenous heirloom varieties rather than a handful of cultivated ones, which is a large part of why its flavor range, from floral and citrusy to deep and winey, is so wide.

Major Growing Regions

  • Yirgacheffe, in the Gedeo Zone of southern Ethiopia, roughly 1,700-2,200m elevation. Known for bright acidity, floral aromatics (jasmine, bergamot), and citrus notes. See our Yirgacheffe Coffee Guide.

How Ethiopian Coffee Is Graded

Ethiopia uses an official grading system administered through the Ethiopia Commodity Exchange (ECX), ranking green coffee Grade 1 through Grade 5 (plus below-grade) primarily by counting defects in a sample. Processing Methods
