Brewing Guide
Brew This Bean Right
Sidamo's full body rewards methods that allow a long extraction — French press and Moka pot shine. Pour-over delivers a cleaner cup that highlights the citrus notes.
French Press
20g coffee · 300ml water at 94°C · Steep 4 min · Press slow. Full body, rich and chocolatey.
Pour-Over (V60)
18g · 300ml · 93°C · 3-minute total brew. Bloom 30s. Citrus clarity, lighter body.
Moka Pot
Fill basket level, don't tamp. Medium heat. The berry sweetness concentrates beautifully espresso-style.
Traditional Ethiopian
Boil coarsely ground beans in a jebena with water. Add sugar and cardamom. Serve in small cups.
Origin
The Sidama Highlands
Sidamo (now called Sidama) is Ethiopia's southernmost highland coffee region — a patchwork of small family farms between 1,800 and 2,200 metres. The volcanic red soil, twice-daily cloud cover, and warm African sun create conditions found nowhere else on earth. These beans are traceable to the small local farmers who have tended this land for generations.
